Pets
You cannot join as an animal by itself, but you may make a pet for your character, either to be an actual pet around the house for some kids or adults, or as a companion while your character adventures. This blurb also includes horses.

Cyrodilic Hunter

Cyrodilic Hunters are a dog bred in Cyrodiil and were introduced in Skyrim three years ago. They thrive mostly in the South of Skyrim where it isn't SO cold, but they will do alright in other places too. They were brought this far northward by Imperials during the war to be used as fighting dogs. Though they are called hunters, for that was their original purpose, they prove to be best at guarding. They are very loving and loyal to their masters and make fantastic companions.
Use German Shepherd pics when creating them. Use only the brown and black variety.

Wolfhounds are very large, versatile dogs, native of the cold, Skyrim landscape. They love to fight, hunt, play, and even snooze in front of a fire. They are rather docile around their masters, but can easily switch to attack mode if a threat presents itself. A fantastic dog for adventuring and around the home as a pet.

Huskies are bred and born for purely fighting. Raised from birth to assist the Dawnguard in their annihilation of the vampire race, they thrive best in harsh environments where there is always a threat and a challenge. They are big, furry, strong dogs. They can carry items in packs and wear leather armor.
Use Siberian Husky pics when creating them. ONLY black and white or silver and white kind. No browns, reds, or pure colored.

If you wish to own one of these types of pets, it will be easier to do so if you have a child or buy them from a special farm that trains and raises them. Otherwise, wood elves will have an easy time getting one from the wild.
Also, adults are more inclined to shoot them for food. Kids and Bosmer are a little more in tune with nature. Children themselves have more gentle natures which allows animals to naturally trust them more.

Skyrim was very particular about the different color horses being available at certain farms, but I am allowing any type of color. The only requirement is that a draft horse be used when choosing a picture for the horse. The following breeds are available:

Special horses (like Shadowmere and Frost) are currently unavailable at this time.
